Steak and Chips: Under 500 Calories!

So, who doesn’t like a good steak and chips right?! Steak and chips is one of my go-to treat dinners, but now with this recipe it can blend into my balanced eating plan. This simple recipe will get the taste buds dancing and all for under 500 calories!

Ingredients:
1 medium white potato / sweet potato*
1 beef medallion steak
1tsp extra virgin olive oil
1tsp of paprika
Pinch of salt
Pinch of black pepper
6 Asparagus tips
*calories based on 1 medium white potato
Method:
Pre-heat your oven to 180 degrees/gas mark 4. Peel your potato and cut into wedges/chip-like shapes. Add them to a Tupperware container where you will add 1tsp olive oil, 1 tsp paprika and a pinch of salt and pepper. Give the tub a good shake (evenly covering your chips with seasoning) and then add your chips to a non-stick oven tray. Bake your chips for 45 minutes, turning them over halfway through.
Pre-heat a pan over a high heat and add your steak, cooking to your liking. Rare: 2 minutes each side; Medium: 3 minutes each side; Well done: 4-5 minutes each side. Once cooked, let the steak rest for 5 minutes on a warm plate before serving.
While your steak is ‘resting’, wash your asparagus tips and season with salt and pepper (optional). Pre-heat a pan on high heat (you can use the steak pan to save on washing up!) and add your asparagus. Grill the asparagus for 2-4 minutes, until lightly charred and just fork tender, turning them often so they brown on all sides.
